- Découper une belle tranche de gingembre et la mettre dans la cocotte
- Remettre la viande dans la cocotte et verser 1,5 litres d’eau, saler

- Écumer avec une passoire l’écume en surface, baisser le feu et mettre à cuire à couvert pendant 2 heures
- Découper en rondelles les carottes, et en cubes les pommes de terre
- Préparer les épices en les mélangeant : curcuma, coriandre, cumin et poivre noir, réserver
- Preparer la sauce en mélangeant : ketchup, sauce soja, sauce Worcestershire, réserver
- Emincer les oignons 🧅
- Écraser l’ail
- Raper 1 CS de gingembre frais
- Mélanger ensemble ail et gingembre
- Faire revenir les oignons dans une poêle avec 1 CS d’huile. Les faire caraméliser pendant 15 min en remuant souvent
- Ajouter aux oignons, le mélange ail et gingembre et faire revenir à nouveau 3 minutes, réserver l’ensemble
- 45 minutes avant la fin de la cuisson du bœuf, ajouter les carottes 🥕
- 15 minutes avant la fin de la cuisson du bœuf, ajouter les pommes de terre
- Quand le bœuf et les légumes sont cuits, les sortir du bouillon avec un écumoire et les réserver
- Prendre 1,2 litres du bouillon
- Dans une cocotte, faire un roux avec le beurre et la farine
- Quand le roux est coloré, ajouter le mélange d’épices (curcuma, coriandre, cumin et poivre) et du sel
- Ajouter au roux, le bouillon petit à petit tout en mélangeant
- Quand la sauce est prête, y ajouter le mélange ketchup/Worcestershire/soja
- Remettre dans la cocotte, le bœuf et les légumes, puis les oignons caramélisés et remettre sur le feu moyen environ 15 minutes
