- 500 gr pomme de terre
- 160 gr farine, voir plus
- 1 oeuf entier

- 100 ml lait
- 1 louche d'eau de cuisson des gnocchis (amidon)
- 60 gr noix
- Sel, poivre

- Laver et cuire dans de l'eau salée les pommes de terre avec la pelure +/-40 min piquer avec une fourchette pour vérifier la cuisson.
- Quand les pommes de terre sont bien cuites, enlever la peau et les Ă©craser en purĂ©e. Ajouter l'Ćuf entier, le sel, bien mĂ©langer et ajouter la farine, malaxer le tout et former une boule.
- Couper en 8, bien fariner et former des boudins de 2 cm de diamÚtre, couper des gnocchis de +/-2cm, facultatif à l'aide d'une fourchette donner une forme au gnocchis, fariner et réserver
- La sauce, verser le lait dans une casserole, enlever la croûte du gorgonzola quand le lait est chaud ajouter le gorgonzola, le faire fondre un peu, ajouter le mascarpone, quand les 2 fromages ont fondus, ajouter le parmesan, poivre, sel, ajouter les noix concassées
- Dans une casserole d'eau bouillante salée, ajouter les gnocchis quand ils remontent ils sont cuits
- Ajouter une louche d'eau de cuisson à la sauce, mélanger et laisser réduire, quand les gnocchis sont cuits les ajouter, cuisson encore 2 minutes pour mélanger les saveurs.
