- 204 g marmelade d'orange amère
- 2 œufs
- 80 g beurre mou

- 20 g beurre et un peu de farine pour le moule
- Finition :
- 200 g confiture d'abricot
- 3 cuillères à soupe marmelade
- 1 orange

- Temps de préparation : 25 minutes Temps de cuisson : 25 à 30 minutes
- Ustensiles :
- Moules à muffins de 6 cm de diamètre
- Préparation :
- Versez le lait dans une petite casserole, portez-le à ébullition puis ajoutez-y l'anis étoilé et laissez infuser environ 10 minutes. Faire chauffer à feux doux votre miel dans une casserole, ou au four micro-ondes.
- Pendant l'infusion, préparez vos ingrédients. Dans un grand saladier, versez les deux farines, la fécule, la levure chimique, la cassonade, la cannelle et les quatre-épices. Ajoutez le miel chauffé ainsi que la marmelade d'orange au mélange précédent, tout en remuant avec une spatule. Incorporez ensuite les deux œufs, le beurre ramolli et enfin le sel sans cesser de remuer. Filtrez le lait infusé à l'aide d'une passoire directement sur la pâte. Lorsque celle-ci est bien homogène, réservez- là.
- Beurrez et farinez les moules a muffins, puis garnissez-les aux trois quarts avec la pâte versez dans une poche douille ou tout simplement à l'aide d'une cuillère à soupe. Enfournez et laissez cuire 25 à 30 minutes. Une fois la cuisson terminée, attendez pour démouler les gâteaux et les déposer sur une grille.
- Pour la finition :
- Lorsque les pains d'épice sont suffisamment refroidis, mettez à fondre à feux doux la confiture d'abricot et trois cuillères à soupe de marmelade d'orange amère. Lorsque le tout est bien fondu, nappez légèrement le dessus de vos pains d'épice, et décorez- les avec des petits quartiers d'orange.
