  8. 5-6 medium sized potatoes
  9. 1 Tbsp mustard oil
  10. 1/2 tsp cumin seeds
  11. 1 whole red chilli
  12. 1 bay leaf
  13. 2 tsp red chilli powder
  14. 1/2 tsp turmeric powder
  15. 1 tsp cumin powder
  16. 1 tsp coriander powder
  17. 2 green chillies
  18. 1/2 cup water
  19. as per taste Salt
  20. as required Ghee to drizzle
  21. as required Whole garam masala
  22. For Chola’r Dal
  23. 1 cup Bengal Gram Dal
  24. 1 whole red chilli
  25. 1 tsp cumin seeds
  26. 1 tsp whole garam masala
  27. 1 medium size potatoes
  28. 3-4 coconut slices
  29. 1/2 tsp turmeric powder
  30. 1 Tbsp raisins
  31. as per taste Salt
  32. 1 Tbsp ghee
  33. For Tomato-Dates Chutney
  34. 3 medium size tomatoes
  35. 1/4 cup dates deseeded and sliced
  36. 1 Tbsp mustard oil
  37. 1/2 cup sugar
  38. 1 Tbsp lime juice
  39. 8-10 cashew nuts
  40. 1 whole red chilli
  41. 1 bay leaf
  42. 1 tsp cumin seeds
  43. 1 Tbsp roasted cumin-coriander-whole red chilli-fennel seed powder

Instructions to make to make Luchi,Aloo Dum, Cholar Dal Chutney

  1. For Luchi - in a bowl add the Maida, oil, salt and with adequate water make a dough. Rest covered for 5 mins. Make lemon size balls, roll it out with rolling pin small sizes. Heat oil in a wok and fry 2-3 at a time. When frying the Luchi’s will puff up. Set aside and complete the batches
  2. For Aloo Dum - wash potatoes and in pressure cooker for 3 whistles on medium flame boil the potatoes. Set aside when depressurised and peel the skin. Set aside. In a wok heat mustard oil, add cumin seeds, bay leaf, whole red chilli and add the potatoes. Fry for 4-5 mins.
  3. In a separate bowl add cumin powder, coriander powder, red chilli powder and 1 Tbsp hot water. Make a slurry and add to the potatoes. On medium flame cook the potatoes. Add salt and slit green chillies. Add 1/2 cup hot water and cook covered for 3-5 mins. Once water level refuses little, add whole garam masala and drizzle ghee. Set aside
  4. For Chola’aur Dal - soak Bengal Gram Dal in a bowl for 15 mins. Discard the water and add to a pressure cooker and add enough water to reach 1” above the Dal. Without having the lid on it, boil until half done. Add turmeric powder, salt and stir. Set aside
  5. In a separate wok add ghee, cumin seeds, whole red chilli and add the Dal. Cook until well done. Set aside. In a separate wok heat 1 tsp oil and fry the potatoes (wash, peel and make 1/2” seize pieces). Add the fried potatoes to the Dal. Take coconut slices and cut into small pieces and add to the Dal. Add Raisins too. Dal is done
  6. For Tomato-Dates Chutney - chop the tomatoes fine. Deseed the dates. In a wok heat mustard oil and add cumin seeds, whole red chilli and bay leaf. Add chopped tomatoes and stir for 1 min. Add salt and stir and cover for 4-5 mins until tomatoes softened. Add dates and sugar, stir well. Add lime juice and stir for 2-3 mins. Add roasted cumin-coriander-fennel seeds and whole red chilli powder. Add cashew nuts and cover and Chutney is done
