- 125 g farine blanche

- Éplucher et couper les pommes de terre. Les faire cuire 20 min à la vapeur.
- Préparer la pâte : dans un saladier, verser la farine et le sel. Ajouter l’eau tiède progressivement tout en pétrissant la pâte. Il n’est pas forcément nécessaire de verser toute l’eau. La pâte est prête lorsqu’elle est bien lisse. Couvrir la pâte avec un torchon propre et laisser reposer à température ambiante.
- Préparer la farce : hacher l’oignon, piment (dans les graines), coriandre et gingembre. Verser dans un saladier et ajouter le jus de citron et les herbes et épices. Écraser les pommes de terres cuites et les incorporer au mélange. Saler et mélanger.
- Rouler la pâte et la diviser en 4 pâtons de taille égale. Fariner la table et les pâtons pour éviter que la pâte n’accroche. Étaler chaque pâton à l’aide d’un rouleau à pâtisserie, et repartir 1/4 de la farce sur chacun. Refermer les bords sur le dessus. Cela forme une boule. Remettre un peu de farine sur les boules et les étaler sous forme de galette. Déposer les galettes sur un linge en attendant de les faire cuire.
